Background
Lecithin is a lipotropic mixture of the diglycerides of stearic, palmitic and oleic acids, linked to the choline ester of phosphoric acid. It occurs naturally in nervous and brain tissue. Commercially it is predominantly available as a by-product in the manufacturing of soy-bean oil.
